Tacos El Gordo imported the Tijuana taquería format and executed it better than almost anywhere north of the border. The adobada pork is stacked on a vertical trompo, basted in a deep red marinade, and shaved into a warm corn tortilla with a sliver of caramelized pineapple. The meat is salty, slightly sweet, and deeply savory, with a crusty edge from the heat. Cilantro and onion are applied with restraint, and the house salsa verde adds a bright, jalapeño-forward kick. The Chula Vista original is the most consistent, but the format works across locations because the training is rigorous. It is loud, fast, and slightly chaotic, and the taco is worth every minute in line.
