The counter seats twelve, and the chef guides the room through a set menu that changes based on what is best that day. The style is Edomae, with subtle curing, smoking, and aging that deepens the flavor of the fish. The rice is firm and seasoned with red vinegar, and each piece is placed directly on the counter in front of you. The experience is quiet, focused, and expensive, but it is also the closest thing San Diego has to a Tokyo-style sushi bar. Reservations are competitive for a reason.
