    South Indian cooking done with proper fermentation and griddle technique.

    Dosa Place batters ferment long enough to carry real sourness, and the griddle runs hot enough for a shattering crust. Sambar is vegetable-heavy rather than thin, and the chutneys are ground fresh.

    Local tip: Order the ghee roast dosa — the extra dollar buys a much better crust.

    Surati is a snack shop first and restaurant second. Chaat comes together fast and correctly, dhokla is steamed rather than sitting, and the pav bhaji is the strongest hot order.

    Tandoori Hut does not try to reinvent anything. Butter chicken is balanced rather than sugary, saag has real texture, and the bread comes out hot. It is the definition of a dependable weeknight order.
