Spun out of Ballast Point and now the biggest name in San Diego spirits — the canned cocktails you see in every grocery store nationwide are made here. The Miramar tasting room is a 50,000 sq ft facility with a proper kitchen, a long bar, and views into the still house.
Tasting: Flights of 4 spirits, full cocktail menu, food all day.
Local tip: Sit at the bar facing the stills and order the tasting flight before the cocktails — the barrel-aged whiskeys are far better than the canned line suggests.
East Village (Downtown) · Bright, design-forward urban tasting room · Known for: Sunday Gin, Vodka, Y&Y Cocktails
The first legal destination distillery in downtown San Diego and still the most walkable. Founded by Laura Johnson, one of the few women-owned distilleries in California. Everything is distilled behind the glass wall you're drinking in front of.
Tasting: Cocktail-forward — no flights needed; the bartenders are the draw.
Local tip: Walkable from Petco Park and Gaslamp hotels. Great pre-Padres-game stop with zero parking hassle.
Miramar · Nautical, warm, low-key · Known for: Rum, spiced rum, bourbon and rye
San Diego's rum specialists — a Navy-themed distillery producing aged and spiced rums plus a small whiskey program. One of the friendliest tasting rooms in Miramar and a favorite of the local cocktail crowd.
Tasting: Rum flights, tiki-leaning cocktails, occasional barrel picks.
Local tip: Ask about single-barrel rum releases; they sell out to regulars within days.
Spring Valley · Experimental small-batch garage energy · Known for: Barrel-finished gins, whiskey, agave spirits
A tiny, wildly creative operation doing barrel finishes and odd-ingredient gins that no bigger distillery would risk. Beloved by bartenders across the county for one-off releases.

Part of Vista's dense craft-beverage corridor, Kill Devil sits within walking distance of several breweries — the easiest way in the county to mix beer and spirits tasting on foot.

Local tip: Do a Vista crawl: Belching Beaver, Mother Earth, and Kill Devil are all within a few blocks.
Chula Vista / South Bay · Sustainability-driven experiment · Known for: Vodka distilled from surplus baked goods
Vodka distilled from unsold pastries and bread rescued from bakeries — a genuinely novel process that turns food waste into a clean, slightly sweet spirit. It works, and it's cheap.
